Hello, what does the plant monster and zombies look like when one uses Aves soul sight?

The primary plant monster has its own soul. It is surprisingly normal, little different from what an average human soul looks like, comparable to the Karterians. Compared to the tree itself, it looks almost small. As though to make up for this, there appear to be multiple- though it's hard to tell whether they're reflections, or genuine duplications. Even parts distant from the primary tree carry their own soul or souls. Apart from the strangeness in number and difficulty in counting them, they look otherwise like healthy human souls.

The plant zombies that are still in the earlier stages of their infestation will carry their own normal human soul- the one that belongs to the Karterian it's infecting. The seedling part of the entity has its own soul, though it is much, much smaller. A fragile, flickering thing, that also gives the uncomfortable sense of being malformed. If souls had critical components analogous to a human's organs, this would be equivalent to something being born without a head, or a heart, or all its organs on one side, or without skin, etc. There may be multiple of these tiny things wrapped up in their host.

Plant zombies in their later stages lack any sort of soul at all. Not that of the underlying human, nor those broken slivers of the seedlings. They are functionally 'dead' in that sense, and only continue moving and acting through reflex. Their movements are increasingly erratic and irrational. For anyone capable of sensing emotions, however, they still have them. They are all negative, sunk into the flesh and bone of the host.

(Were they left completely alone, this entity would eventually settle down somewhere to root and become a magnificent, ever-growing tree. Its capacity for violence would fade, and would react to damage by growing harder.)
