Would an owlbear be a permitted soul type, as a real creature in the BG3 setting, or would I need to pick one half and add the other in later to "make" an owl bear?
Oh, that's a tricky one....

An owlbear could, theoretically, be available as solely a Carnivora or Aves-type, without needing two souls to build your own. Carnivora would be an easier match, being as the build of an owlbear already lends itself well to- well, bears. To go the Aves route would render them into a flightless kind of bird, but it's still possible.

So yes, it's possible to draw inspiration from an owlbear while being solely a Carnivora or Aves. (And of course, a owlbear-themed Carnivora wouldn't have access to any sort of Aves-specific powers, and vice versa.)
