Either they can keep all their human teeth and have their new set try to fit in amongst them, knocking everything out of alignment and getting real crowded in there- or the old can drop out and be replaced by the new, in whole or in part. Or the existing set could simply mutate while remaining firmly attached, rather than regrowing the whole thing from scratch. Really, you're free to take it in whatever direction is most interesting.
